One of the best things about my job is that I get to work from home a lot. And because of that, I have the opportunity to prepare some things during the day to make for an easy dinner.
A favorite of mine is my mother’s pasta salad. When I made it my husband said it was a cross between a pasta salad and an antipasta, which I can definitely see. I don’t have a recipe for this, but I will list out what I used. I made a huge batch and this can be so subjective, so definitely adjust with whatever ingredients fit best for you!
Here is the finished product:
I used 2 boxes of rotini pasta, red bell pepper, red onion, salami, pepperoni, fresh mozzarella, provolone and shaved parmesan cheese. I chose to use an Italian dressing to lightly toss it in and then added to taste. I prefer more dressing, but some people I know do not.

Super easy to follow and the chicken came out nice and moist just as the recipe promised! I didn’t have seasoning salt so I did add in just a few Italian seasonings, but with the breadcrumb I don’t think I would have missed it. The post does say not to over coat in mayo, which could be easy to do especially if you are using thin chicken breasts. I also chose not to bake on a rack and just put them in a pan and while they were a little mushy on the bottom, the taste was great. Pic below with the pasta salad.
